The Sweet Potato Base
This base is creamy, gently sweet, and loaded with beta-carotene, potassium, and fiber. Coconut milk keeps it dairy-free and silky, while cinnamon and vanilla add warmth without needing excess sugar.
Ingredients:
4 large sweet potatoes, peeled + cubed
½ cup full-fat coconut milk
2 Tbsp grass-fed butter or coconut oil
3 Tbsp maple syrup
1 tsp vanilla extract
1 tsp cinnamon
¼ tsp nutmeg
1–2 pinches sea salt
Optional: 1 scoop collagen peptides for extra protein
Instructions:
Peel and chop sweet potatoes into 1-2inch cubes.
Boil sweet potatoes until fork-tender, about 20 minutes.
Mash with coconut milk, butter/oil, maple syrup, vanilla, spices, and salt.
Spread into a greased 9×13 baking dish
Sourdough-Oat & Pecan Granola Crunch
