This Sweet Potato Bake is everything: warm, nutrient-dense, blood-sugar friendly, kid-approved, and topped with a crunchy sourdough-oat granola that adds texture and subtle tang. And if you don’t keep sourdough starter, no worries — we also have a clean alternate topping option. This dish works beautifully for holidays, cozy weekends, or as a nutrient-dense side to prep ahead for the week.

The Sweet Potato Base

This base is creamy, gently sweet, and loaded with beta-carotene, potassium, and fiber. Coconut milk keeps it dairy-free and silky, while cinnamon and vanilla add warmth without needing excess sugar.

Ingredients:

  • 4 large sweet potatoes, peeled + cubed

  • ½ cup full-fat coconut milk

  • 2 Tbsp grass-fed butter or coconut oil

  • 3 Tbsp maple syrup

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • 1–2 pinches sea salt

  • Optional: 1 scoop collagen peptides for extra protein

Instructions:

  1. Peel and chop sweet potatoes into 1-2inch cubes.

  2. Boil sweet potatoes until fork-tender, about 20 minutes.

  3. Mash with coconut milk, butter/oil, maple syrup, vanilla, spices, and salt.

  4. Spread into a greased 9×13 baking dish

 

Sourdough-Oat & Pecan Granola Crunch

This topping brings gut-friendly fermentation benefits and the perfect crunchy contrast.

Ingredients:

  • 2 cups gluten-free rolled oats

  • ½ cup chopped pecans

  • ½ cup sourdough starter discard

  • 3 Tbsp melted coconut oil

  • 2–3 Tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • Pinch sea salt

Instructions:

  1. Preheat oven to 325°F.

  2. Mix oats, pecans, cinnamon, and salt in one bowl.

  3. Mix sourdough discard, coconut oil, maple syrup/honey, and vanilla in another.

  4. Combine, spread on a parchment-lined baking sheet, and bake 22–28 minutes, stirring once halfway through.

  5. Let cool.

  6. Reserve 1½–2 cups for the casserole (snack on the rest!).

Alternate Topping (No Sourdough Starter Needed)

Clean, simple, still crunchy + delicious.

Ingredients:

  • 2 cups gluten-free oats

  • ½ cup pecans

  • 3 Tbsp coconut oil

  • 2–3 Tbsp maple syrup

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • Pinch sea salt

Instructions:

  1. Preheat oven to 325°F.

  2. Combine all ingredients in a bowl, spread on a parchment-lined baking sheet, and bake 20-25 minutes, stirring halfway.

  3. Let cool.

  4. Reserve 1½–2 cups for the casserole (snack on the rest!).

Assemble & Bake

  1. Preheat oven to 350°F.

  2. Sprinkle sourdough granola or the alternate oat-pecan crunch across the top of the mashed sweet potato base in your baking dish.

  3. Bake at for 35–40 minutes until golden and fragrant.

**Feel free to toss a few mini marshmallows on top of the granola as well for a more traditional feel—because life is all about balance.
